Cherry Simple Syrup

  • 2 cups cherries, pitted (frozen or fresh)

Cherry Vanilla Iced Latte

  • ½ cup cold brew coffee or 2 shots chilled espresso
  • ½ cup vanilla almond milk (e.g. Califia Farms)
  • 2 tbsp vanilla almond creamer (e.g. Califia Farms)
  • 23 tbsp homemade cherry simple syrup (adjust based on sweetness preference)

Instructions

  1. Make Cherry Simple Syrup: Combine the pitted cherries, water, and sugar or monk fruit sweetener in a medium saucepan over medium heat. Stir occasionally and gently press the cherries with a spoon to release their juices.
  2. Simmer and Thicken: Bring the mixture to a gentle simmer. Continue stirring as the sugar dissolves completely and the syrup thickens slightly, usually about 10-15 minutes.
  3. Strain Syrup: Remove the pot from heat and strain the syrup through a fine mesh sieve into a resealable glass container. Discard the solids. Allow the syrup to cool completely before refrigerating or using in the drink.
  4. Prepare Latte: In a glass filled with ice, pour in ½ cup cold brew or chilled espresso shots.
  5. Add Milk and Creamer: Stir in ½ cup vanilla almond milk and 2 tablespoons vanilla almond creamer until well combined.
