These Cherry Chunk Cookies are a delightful combination of buttery dough, rich dark chocolate chunks, and sweet dried cherries. Perfect for any occasion!

Ingredients

Scale

Cookie Dough:

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup sugar
  • 1 large egg
  • 1 teaspoon almond extract
  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Mix-ins:

  • 1/2 cup dark chocolate chunks
  • 1 cup dried cherries, chopped

Instructions

  1. Preheat the oven: Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Cream the butter and sugars: In a stand mixer, beat together the butter, brown sugar, and sugar until fluffy, about 1 minute.
  3. Add egg and extract: Mix in the egg and almond extract until smooth.
  4. Combine dry ingredients: Sift together the flour, baking soda, and salt, then add to the mixer on low speed.
  5. Stir in mix-ins: Gently fold in the chocolate chunks and chopped cherries.
  6. Shape and bake: Roll the dough into 1-inch balls and place them 2 inches apart on the baking sheet. Flatten slightly with your hand. Bake for 10-12 minutes until lightly golden.
  7. Cool and enjoy: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can substitute the dark chocolate chunks with milk or white chocolate if preferred.
  • For an extra burst of flavor, try using dried cranberries or blueberries instead of cherries.
