Chicken & Potatoes:

  • 1.5 lbs boneless, skinless chicken breast or tenders (thighs work too)
  • 2 lbs red potatoes
  • 2/3 cup ranch dressing, divided
  • 1 tablespoon paprika
  • 2 teaspoons onion powder
  • 1 tablespoon ranch seasoning
  • 1 tsp each salt and pepper
  • 6 tablespoons butter, cubed
  • 5 cloves garlic, minced

Additional Ingredients:

  • 1/2 cup sour cream
  • 1/2 cup parmesan, grated
  • 1 cup cheddar cheese, shredded
  • 1/2 cup mozzarella, shredded
  • 5 strips bacon, cooked crispy and diced
  • 2 tablespoons chives, minced

Instructions

  1. Dice potatoes and chicken: Cut potatoes into 1″ pieces and add to the slow cooker. Dice chicken into 2″ pieces and add to the slow cooker. Add seasonings and 1/2 cup ranch dressing, then toss to combine. Add butter and garlic. Cook on low for 6 hours or on high for 4 hours.
  2. Add sour cream and remaining ranch: Toss the chicken and potatoes and remove excess liquid. Add sour cream and remaining ranch dressing. Cook for an additional 30-45 minutes. Stir to combine.
  3. Top with cheeses: Sprinkle all three cheeses over the chicken and potatoes. Cover and cook until melted, about 15 minutes. Garnish with chives and bacon. Serve and enjoy!
