Bacon:

  • 10 slices of cooked and chopped bacon

Cauliflower:

  • 8 cups of cauliflower, cut into bite-sized pieces

Cheese Sauce:

  • 6 Tbsp. flour
  • 3 Tbsp. butter
  • 4 cups 1 % milk (or light whipping cream for a thicker sauce)
  • 3 cups sharp cheddar cheese, plus extra for topping
  • 1 tsp. nutmeg
  • Salt & pepper, to taste

Topping:

  • ¾ cup breadcrumbs
  • Fresh parsley, chopped

Instructions

  1. Cook Bacon: In a large skillet over medium-high heat, cook the bacon until crispy and browned. Set aside on a paper towel.
  2. Prepare Cauliflower: Boil a large pot of salted water. Add cauliflower and cook for 3 minutes. Drain and set aside.
  3. Make Cheese Sauce: In the same pot, melt butter. Whisk in flour, then add milk, stirring constantly until thick. Stir in cheese, nutmeg, salt & pepper.
  4. Combine Ingredients: Add cauliflower and bacon to the cheese sauce, toss to combine. Pour into a baking dish, top with breadcrumbs and cheese.
  5. Bake: Bake at 375F for 30 minutes until bubbly and golden.
  6. Serve: Sprinkle with fresh parsley before serving.
