Instructions

  1. Prepare ingredients: Wash and slice the carrot if not shredded; measure out all other ingredients to have them ready for blending.
  2. Add to blender: In a large high-powered blender, combine the sliced carrot, frozen banana, frozen pineapple chunks, light coconut milk, Greek yogurt, gluten free oats, pecan or almond butter, vanilla extract, ground cinnamon, and a pinch of nutmeg.
  3. Blend: Blend on high speed for 1-2 minutes or until the mixture is completely smooth and creamy throughout. Pause and scrape down the sides if needed to ensure even blending.
