Bread and Butter

  • 2 Stecca’s or your favorite rustic sandwich bread, sliced in half lengthwise
  • 3 tbsp unsalted butter (divided)

Vegetables and Seasonings

  • 16 oz cremini mushrooms, stems removed, cleaned, and quartered
  • 2 small onions, halved and thinly sliced
  • 1 whole jalapeno pepper, seeds removed and thinly sliced
  • 1/2 tbsp fresh rosemary, finely minced
  • 1 tsp salt
  • 1 pinch cracked black pepper

Cheese and Spread

  • 4 slices baby Swiss cheese
  • 4 slices Havarti cheese
  • 2 tbsp mayonnaise

Optional

  • Fresh greens lightly tossed in olive oil for serving

Instructions

  1. Caramelize the Vegetables: Heat a large nonstick skillet over medium heat and add the mushrooms, sliced onions, jalapeno slices, and minced rosemary. Season with salt and black pepper, then add 1 tablespoon of the butter. Cook for a few minutes before stirring or flipping. Reduce the heat slightly and continue cooking for about 20 minutes, stirring occasionally, until the mushrooms and onions are deeply caramelized and have reduced in size. Set aside.
  2. Toast the Bread: Butter the remaining bread slices evenly on one side with the remaining 2 tablespoons of butter. Using a large skillet on medium heat, place the bread butter-side down and toast until golden and crisp. Repeat for all slices.
  3. Preheat Oven: Set your oven to 325°F (160°C) to warm and melt the sandwiches later.
  4. Assemble the Sandwiches: Spread a generous layer of mayonnaise on the bottom piece of bread. Layer two slices of baby Swiss cheese, then pile on the caramelized mushroom and onion mixture. Add two slices of Havarti cheese on top, then cover with the second slice of bread.
  5. Repeat: Assemble the second sandwich using the same method.
  6. Melt the Cheese: Place the assembled sandwiches on a baking sheet and bake in the preheated oven for 5-7 minutes, or until the cheese has melted beautifully.
