  • ¼ cup grated pecorino cheese (plus ¼ cup shaved)
  • 2 garlic cloves (grated)
  • 1 teaspoon sea salt
  • Freshly ground black pepper

Salad:

  • 3 cups cherry tomatoes (halved)
  • 1 cup mini mozzarella balls (halved)
  • ½ cup thinly sliced red onion
  • Heaping 1 cup fresh basil leaves (torn, plus more for garnish)

Instructions

  1. Cook the Pasta: Boil water and cook pasta until slightly past al dente. Drain, toss with olive oil, and cool.
  2. Prepare the Dressing: Whisk together olive oil, lemon juice, balsamic vinegar, grated pecorino, garlic, salt, and pepper in a bowl.
  3. Combine Ingredients: Toss pasta with dressing, then add tomatoes, mozzarella, red onion, and basil. Mix gently.
