Cucumber:

  • 1 English cucumber, thinly sliced

Salad:

  • 8 ounce package imitation crab meat, chopped
  • 3 green onions, sliced
  • Soy sauce, spicy mayo, kosher salt, and pepper to taste
  • 1 avocado, sliced
  • Optional:
  • Sesame seeds, pickled ginger, wasabi, ginger soy glaze (Asian section of grocery store or Amazon)

Instructions

  1. Slice the cucumber: Slice the cucumber very thin using a mandolin or a sharp knife. Place in a bowl with a lid.
  2. Prepare the salad: Add the chopped crab meat, green onions, soy sauce, spicy mayo, kosher salt, and pepper to the bowl. Cover with the lid and shake to mix. Adjust seasoning as needed.
  3. Assemble the salad: Top the salad with sliced avocado and additional spicy mayo, sesame seeds, pickled ginger, wasabi, and/or ginger soy glaze if desired.
