Ingredients

Scale

Bruschetta Topping:

  • 4 Roma tomatoes, diced
  • 1/4 cup basil leaves, chopped
  • 1 garlic clove, minced
  • 1 tablespoon extra virgin olive oil
  • 12 teaspoons balsamic vinegar
  • Salt, to taste

Cheese Mixture:

  • 8 oz feta cheese, crumbled
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt, to taste

Garnish:

  • More basil leaves, chopped
  • Red pepper flakes
  • Freshly grated Parmesan cheese

Instructions

  1. Preparing the Bruschetta: Begin by coring and dicing the Roma tomatoes. Combine tomatoes, basil, garlic, olive oil, balsamic vinegar, and salt in a bowl. Allow to marinate for 10 minutes.
  2. Preparing the Cheese Mixture: In a food processor, blend feta cheese, cream cheese, sour cream, garlic, lemon juice, and olive oil until smooth. Adjust seasoning with salt.
  3. Assembling the Dip: Spread the cheese mixture in a serving dish. Top with the marinated bruschetta mixture. Garnish with basil, red pepper flakes, and Parmesan cheese.

Notes

  • For a lighter version, you can use Greek yogurt instead of sour cream.
  • Adjust the amount of balsamic vinegar and red pepper flakes to suit your taste preferences.
  • The dip can be made ahead and refrigerated, but add the garnishes just before serving for the best presentation.
