  • 1 heaping tablespoon peanut butter (sugar-free)
  • 1 large extra-large egg
  • 2 teaspoons cocoa powder
  • 2 teaspoons monkfruit sweetener (optional, only add if you enjoy sweet waffles)
  • pinch salt
  • 1 1/2 tablespoons sugar-free semi-sweet chocolate chips (divided)
  • 12 teaspoons of water as needed

Instructions

  1. Combine Ingredients: In a bowl, mix together the peanut butter, egg, cocoa powder, pinch of salt, sweetener, and 1 tablespoon of chocolate chips.
  2. Adjust Consistency: If needed, add 1-2 teaspoons of water to thin the mixture.
  3. Preheat Waffle Maker: Preheat a mini waffle maker according to the manufacturer’s directions.
  4. Cook Waffles: Pour half of the batter into the waffle iron, sprinkle with chocolate chips, and cook for 2-3 minutes until done. Repeat with the remaining batter.
