For the Brownie Cookies:

  • 7 ounces semi-sweet 60% cocoa bar (chopped)
  • 3/4 cup all-purpose flour (*see notes below for measuring*)
  • 1/4 cup unsweetened Dutch cocoa powder
  • 2 teaspoons espresso powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar (packed)
  • 2 large eggs (room temperature)
  • 1 egg yolk (room temperature)
  • 1 teaspoon vanilla extract

For Finishing:

  • Maldon Flaky Finishing salt

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (180°C) and line two large baking sheets with parchment paper.
  2. Melt the chocolate: Melt the chopped chocolate in the microwave or on the stove, then set aside to cool.
  3. Prepare dry ingredients: In a bowl, whisk together flour, cocoa powder, espresso powder, baking powder, and salt.
  4. Combine butter and sugars: Melt the butter with sugars, then whisk together.
  5. Add eggs and vanilla: Mix in eggs, egg yolk, and vanilla extract.
  6. Combine wet and dry: Fold in the melted chocolate and dry ingredients until just combined.
  7. Scoop and bake: Use a cookie scoop to place dough on baking sheets, sprinkle with flaky salt, and bake in batches.
  8. Cool and store: Cool cookies on a wire rack and store leftovers in an airtight container.

Notes

  • For measuring flour, spoon it lightly into a measuring cup without packing it down.
  • Make sure to bake one tray at a time for even cooking.
  • Do not let the cookie dough sit in the bowl before scooping.
