Instructions

  1. Cook the sausage: Heat a large skillet over medium-high heat. Add 1 pound of ground sausage and cook, breaking it up with a spoon, until fully browned and no longer pink. Use a slotted spoon to remove the cooked sausage from the skillet, leaving the rendered fat in the pan.
  2. Sauté vegetables: Add the chopped onion, green bell pepper, and red bell pepper to the skillet with the sausage grease. Sauté for 5 to 7 minutes, stirring occasionally, until the vegetables are tender and fragrant.
  3. Scramble the eggs: Push the sautéed vegetables to one side of the skillet. Pour the lightly beaten eggs into the empty side and scramble until fully cooked. Mix the scrambled eggs with the sautéed vegetables to combine evenly.
  4. Combine rice and sausage: Return the cooked sausage to the skillet and add the 3 cups of cooked white rice. Stir well to mix all the ingredients together thoroughly.
  5. Season and heat through: Pour in 2 to 3 tablespoons of soy sauce according to taste. Stir the mixture and continue cooking until the rice is heated through and the flavors meld.
  6. Garnish and serve: Remove from heat. Garnish the fried rice with chopped green onions and sprinkle everything bagel seasoning over the top before serving.
