  1. Make the blackberry balsamic jam: In a saucepan, combine blackberries, balsamic vinegar, sugar, lemon juice, and a pinch of kosher salt. Bring to a boil over medium-high heat, then reduce the heat to simmer. Use a wooden spoon or potato masher to crush the berries as they cook.
  2. Simmer until thickened: Let the mixture simmer for 7 to 10 minutes until it reduces to a thick jam consistency. Remember, it will thicken more as it cools. Transfer the jam to a small bowl and allow it to cool completely.
  3. Prepare the brie and skillet: Slice the brie into ½ inch thick pieces. Heat a skillet on medium heat, ensuring it’s warm but not too hot to avoid burning the bread before the cheese melts. Depending on skillet size, cook the sandwiches in batches if necessary.
  4. Butter and assemble first bread slice: Spread butter on one side of four bread slices. Place these slices butter side down in the pan, then layer the brie slices on top. Cook gently until the brie softens and the bread turns golden brown. Sprinkle the brie with chopped fresh thyme.
