Ingredients:

  • 2 sweet onions (such as Walla Walla or Vidalia)
  • 1 tablespoon olive oil
  • kosher salt
  • fresh ground pepper

Instructions

  1. Prepare the Onions: Hold the onion on a cutting board, with the root end facing sideways. Drive a wooden skewer through the center of the onion about 3/4 of an inch in from the root.
  2. Slice the Onions: Slice the root end off on one side of the skewer and leave about 3/4 inch of onion on the other side. Continue slicing until both onions have even slices about 3/4 inch thick.
  3. Season the Onions: Brush the onion slices on both sides with olive oil and season with salt and pepper.
  4. Grill the Onions on Charcoal Grill: Make a two-zone fire on the grill, place the onions on the cool side, and cook until golden brown, flipping and rotating every 10-15 minutes.
  5. Grill the Onions on Gas Grill: Preheat the grill, lower the burners to low, and cook the onions on the low burner until golden brown, flipping every 10 minutes.
