- 11.2 ounce bottle dark beer (such as Guinness, or beer of your choice)
- 2 tablespoons olive oil
- 1 cup yellow onions, diced
- 15 ounce can red kidney beans, drained and rinsed
- 15 ounce can white kidney beans, drained and rinsed
- 28 ounce can crushed tomatoes (or diced)
- 2 large cloves garlic, minced
- 2 tablespoons ground cumin
- 1–2 tablespoons chili powder
- 1 tablespoon chipotle chili powder
- 1 tablespoon organic brown sugar

- Heat the oil and sauté onions: Warm 2 tablespoons of olive oil in a large Dutch oven over medium heat. Add the diced yellow onions and cook for 3 to 4 minutes, until they become soft and translucent.
- Brown the ground beef and garlic: Add 1.5 pounds of ground beef and 2 minced garlic cloves to the pot. Cook, stirring occasionally, until the meat is browned and no longer pink.
- Add spices, tomatoes, and beans: Stir in 2 tablespoons ground cumin, 1 to 2 tablespoons chili powder, and 1 tablespoon chipotle chili powder. Then add the crushed tomatoes along with the drained and rinsed red and white kidney beans.
- Pour in beer and add sweetness: Pour in the entire 11.2-ounce bottle of dark beer and add 1 tablespoon of organic brown sugar. Stir thoroughly to combine all ingredients evenly.
- Simmer the chili: Cover the Dutch oven with a lid and allow the chili to simmer gently over low heat for 1 to 1.5 hours. This slow simmer lets flavors meld and deepens the chili’s richness.
- Serve with toppings: Ladle the chili into bowls and garnish with your choice of sour cream, shredded cheese, diced red onions, sliced jalapeños, and green onions for added freshness and spice.
