Prawns Marinade

  • 3 tbsp mayonnaise
  • 1 tbsp red chilli sauce or Sriracha
  • 6 to 7 tbsp sweet chilli sauce
  • 1 tbsp honey

Garnish

  • Spring onion (for garnish)
  • Lettuce leaves (for serving)

Instructions

  1. Prepare the sauce: In a bowl, thoroughly combine mayonnaise, red chilli sauce or Sriracha, sweet chilli sauce, and honey until smooth. Set aside to let the flavors meld.
  2. Marinate the prawns: In another bowl, place the prawns and add salt, red chilli flakes, and yogurt or buttermilk. Mix well to coat, then let sit for 10 to 15 minutes to tenderize and infuse flavor.
  3. Coat the prawns: Drain most of the buttermilk from the prawns. Place cornflour in a separate bowl and toss the prawns in it, ensuring each prawn is thoroughly coated with a light, even layer of cornflour for crispiness.
  4. Deep fry the prawns: Heat oil in a deep pan over medium-high heat. Once hot, carefully deep fry the coated prawns in batches until they turn golden brown and crispy, about 2-3 minutes per batch. Remove and drain on paper towels to remove excess oil.
  5. Combine prawns with sauce: Place the hot, crispy prawns into the prepared sauce bowl. Toss gently but thoroughly to coat each prawn evenly with the creamy, spicy sauce.
  6. Serve: Arrange the sauced prawns over a bed of fresh lettuce leaves and garnish with chopped spring onions. Serve immediately while hot and crispy.
