Bananas Foster:

  • 8 medium bananas (cut into 1/4 inch slices)
  • 4 Tbsp salted butter, plus 1 Tbsp for baking dish
  • 1/2 cup heavy cream
  • 1/3 cup light corn syrup
  • 2/3 cup packed light brown sugar
  • 6 Tbsp dark rum
  • 1 tsp pure vanilla extract

Crisp Topping:

  • 1 cup quick cooking oats (not instant)
  • 3/4 cup packed light brown sugar
  • 1/2 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup cold salted butter (cubed)
  • 1/2 cup roughly chopped walnuts
  • vanilla ice cream for serving

Instructions

  1. Preheat oven and prepare baking dish: Preheat oven to 350°F. Brush a 1 1/2-2 quart baking dish with 1 Tbsp melted butter. Set aside.
  2. Prepare Bananas Foster: Melt 4 Tbsp butter with heavy cream, corn syrup, and brown sugar in a large skillet. Add rum and vanilla. Toss bananas in the mixture and transfer to the baking dish.
  3. Make Topping: Mix oats, brown sugar, flour, cinnamon, and salt. Cut in cold butter until crumbly. Add walnuts and sprinkle over bananas.
  4. Bake: Bake for 30-40 minutes until golden and bubbly.
  5. Serve: Let it cool for 5 minutes, then serve with vanilla ice cream.

Notes

  • You can flambe the bananas foster with rum for a showstopping presentation.
  • Adjust the sweetness by reducing or increasing the amount of brown sugar in the topping.
