Muffins:

  • 3 bananas
  • 1 cup granulated sugar
  • 1/2 cup salted butter (softened)
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt

Streusel Topping:

  • 1/4 cup salted butter (softened)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven: Preheat the oven to 350 degrees F. Line a 12-count muffin pan with cups/liners or spray with non-stick spray. Set aside.
  2. Mash bananas: In a large bowl, mash the bananas with a fork. Add sugar and softened butter. Beat until combined. Add eggs and vanilla; mix until smooth.
  3. Combine dry ingredients: In a separate bowl, mix flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring until combined. Scoop the batter into muffin cups.
  4. Prepare streusel topping: In another bowl, combine all streusel topping ingredients. Sprinkle on top of each muffin cup.
  5. Bake: Bake for 20 minutes. Let muffins cool in the pan for 10 minutes before serving.
