Instructions

  1. Mash Bananas: In a large mixing bowl, mash the bananas thoroughly until smooth to create the base of the dough.
  2. Grind Oats: Place 2 1/2 cups of oats into a food processor and grind until they reach a fine, flour-like consistency. Add this ground oat flour to the mashed bananas in the mixing bowl.
  3. Mix Ingredients: Add the remaining 1 cup of whole oats, ground cinnamon, and flax seed or chia seeds if using into the bowl. Stir to combine all ingredients well. Adjust texture by adding more oats if the mixture is too wet, or additional mashed banana, honey, or water if too dry. The dough should hold together without being sticky.
  4. Preheat Oven and Prepare Surface: Preheat your oven to 350°F (175°C). Lightly dust your rolling surface with flour or some ground oats to prevent sticking.
  5. Roll and Cut Dough: Roll out the dough to approximately 1/4 inch thickness. Use your favorite cookie cutter to cut out desired shapes and place them on a silicone baking mat or parchment-lined baking sheet.
  6. Bake Treats: Bake at 350°F for 15 minutes. For crunchy treats, turn off the oven and leave the treats inside for 2 hours to dry out. For soft treats, remove the treats immediately after baking and cool at room temperature.
  7. Store Properly: Store soft treats in an airtight container in the refrigerator for up to 2 weeks. Store crunchy treats at room temperature in an airtight container for up to 3 weeks.
