Banana Filling:

  • 5 bananas (sliced)
  • ½ cup brown sugar
  • ½ tsp ground cinnamon
  • ⅛ tsp ground allspice
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • ½ tsp salt

Batter:

  • ½ cup sugar
  • 8 tbsp cold butter
  • 1 tbsp baking powder
  • 1 ¼ cups 1:1 GF Flour
  • ¾ cup buttermilk
  • ½ cup walnuts (chopped)
  • ½ cup quick cooking oats

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (190°C) and butter a 9×11 baking dish or a 10” round skillet.
  2. Prepare the Banana Filling: Toss together bananas, brown sugar, cinnamon, allspice, cornstarch, and vanilla extract. Spread in the baking dish.
  3. Prepare the Batter: Mix sugar, flour, baking powder, and salt. Cut in cold butter until crumbly. Stir in vanilla, buttermilk, walnuts, and oats.
  4. Assemble the Cobbler: Drop spoonfuls of batter over the banana filling.
  5. Bake: Bake for 35-40 minutes until golden brown and bubbly.
  6. Finish and Serve: Cool slightly, then drizzle with caramel sauce before serving.
