Zucchini Fries:

Lemon Parsley Aioli:

  • ½ cup mayonnaise
  • 1 lemon (juiced)
  • 1 garlic clove (minced)
  • 1 tablespoon finely chopped parsley

Instructions

  1. Prep zucchini: Preheat the oven to 425°F (218°C) and line two baking trays with parchment paper. Slice the zucchini into quarters. You should have 16 slices per zucchini.
  2. Prep the breading: Beat the egg in a small bowl. Combine Parmesan, garlic powder, Italian seasoning, salt, and pepper in a separate bowl.
  3. Dip the zucchini: Dip a zucchini slice in the egg wash, coat with the cheese mixture, and place on the baking tray. Repeat for all zucchini slices.
  4. Bake: Bake for 25-30 minutes, flipping halfway through. Serve with lemon parsley aioli.
