Caramelized Apples

  • 4 apples, peeled and diced
  • 4 tbsp butter
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • ¼ tsp kosher salt

Baked Oatmeal

  • 1 ½ cups milk
  • 2 eggs

  • 2 cups quick cooking oats
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp allspice
  • ¼ tsp kosher salt
  • 4 tbsp butter, melted
  • recipe Caramelized Apples (reserved)

Instructions

  1. Prepare Caramelized Apples: Peel and dice the apples into bite-sized pieces. Heat a skillet over medium-high heat and add the butter, allowing it to melt completely. Add the diced apples and sauté for a few minutes until they start to soften. Stir in brown sugar, cinnamon, and kosher salt. Continue to cook the apples, stirring occasionally, until they become tender and caramelized. Remove from heat and allow to cool slightly.
  2. Preheat Oven and Prepare Dish: Set your oven to 375°F (190°C). Lightly spray an 11×7-inch baking dish with non-stick spray to prevent sticking and set aside.
  3. Mix Wet Ingredients: In a large mixing bowl, whisk together the milk and eggs until well combined. Stir in the brown sugar until it dissolves.
  4. Combine Dry Ingredients: Add the quick cooking oats, baking powder, cinnamon, allspice, and kosher salt to the wet mixture. Stir thoroughly until the ingredients are evenly incorporated.
  5. Add Butter and Apples: Pour the melted butter into the oatmeal mixture and stir in gently. Incorporate one third of the cooled caramelized apples into the batter, folding them evenly throughout.
  6. Bake the Oatmeal: Pour the oatmeal mixture into the prepared baking dish, spreading it evenly. Place the dish in the preheated oven and bake for 25 to 30 minutes, or until the oatmeal is firm in the center and lightly golden on top.
  7. Serve with Remaining Apples: While the oatmeal bakes, gently reheat the remaining two thirds of the caramelized apples. Once the oatmeal has cooled for about 5 minutes after baking, cut into portions, top with the warm caramelized apples, and serve immediately for a delicious breakfast or brunch.
