This elegant baked brie recipe features a creamy brie wheel infused with spiced fig jam, chipotle, and smoked paprika, topped with crispy prosciutto, honey drizzle, and fresh chives. Ingredients

Scale

Cheese

  • 12½ oz brie wheel (in crate)

Spiced Fig Jam

  • ⅓ cup fig jam
  • ½ tsp chipotle powder
  • ½ tsp smoked paprika

Toppings

  • 4 oz prosciutto (sliced)
  • honey (for drizzling)
  • chives (chopped, for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the brie.
  2. Prep the Brie: Cut a round piece of parchment paper about 1 inch wider than the brie wheel. Place the brie on top and press it into its crate, doubling up the crate for full support to keep the cheese intact during baking.
  3. Score the Brie: Using a sharp knife, carefully score shallow slits across the top of the brie, making sure not to cut to the edges so the cheese holds together. Remove just the rind inside the slits to create room for the fig jam filling.
  4. Prepare Spiced Fig Jam: In a small bowl, combine fig jam with chipotle powder and smoked paprika until fully blended to add a smoky, spicy flavor.
  5. Fill Slits with Jam: Spoon or pipe the spiced fig jam mixture into each slit on the brie, filling the grooves created by scoring.
  6. Add Prosciutto: Cut the prosciutto into small pieces and gently press them into the jam-filled slits using the back of a knife to combine flavors and textures.
  7. Bake the Brie: Place the brie wheel in its crate on a small baking sheet and bake in the preheated oven for 25 to 35 minutes. Bake until the prosciutto is golden and crisp, and the cheese is melted but still retains its shape within the crate.
  8. Finish and Serve: Remove from the oven, drizzle honey over the warm brie, and sprinkle freshly chopped chives for a fresh aromatic finish before serving.

Notes

  • Use a sharp knife to carefully score the brie without cutting through to ensure the cheese holds its shape while baking.
  • Adjust chipotle powder amount depending on desired spice level.
  • If you don’t have a brie crate, use a small oven-safe dish or line a baking dish with parchment paper.
  • Serve immediately after baking to enjoy the melted creamy texture.
  • Pairs wonderfully with crusty bread, crackers, or fresh fruit.
