For the donuts:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 egg, beaten
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup fresh blueberries
  • Zest of 1 lemon

For the glaze:

  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat and prepare: Preheat your oven to 350°F (180°C). Grease a donut pan with non-stick cooking spray.
  2. Mix dry ingredients: In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add wet ingredients: Stir in milk, vanilla extract, beaten egg, and melted butter until just combined. Gently fold in blueberries and lemon zest.
  4. Fill donut pan: Spoon the batter into a piping bag or a zip-top bag with the corner snipped off. Pipe the batter into the prepared donut pan, filling each well about 2/3 full.
  5. Bake: Bake for 12-15 minutes or until the donuts spring back when lightly touched.
  6. Glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract to make the glaze. Dip the cooled donuts into the glaze and let set before serving.
