For the donuts:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/2 teaspoon vanilla extract
- 1 egg, beaten
- 2 tablespoons unsalted butter, melted
- 1/2 cup fresh blueberries
- Zest of 1 lemon
For the glaze:
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
- Preheat and prepare: Preheat your oven to 350°F (180°C). Grease a donut pan with non-stick cooking spray.
- Mix dry ingredients: In a mixing bowl, combine flour, sugar, baking powder, and salt.
- Add wet ingredients: Stir in milk, vanilla extract, beaten egg, and melted butter until just combined. Gently fold in blueberries and lemon zest.
- Fill donut pan: Spoon the batter into a piping bag or a zip-top bag with the corner snipped off. Pipe the batter into the prepared donut pan, filling each well about 2/3 full.
- Bake: Bake for 12-15 minutes or until the donuts spring back when lightly touched.
- Glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract to make the glaze. Dip the cooled donuts into the glaze and let set before serving.
