Ingredients

Scale

Dry Ingredients

  • 1 cup all purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon

Wet Ingredients

  • 1 large egg
  • ½ cup whole milk

Fruit

  • 2 ¼ cups Granny Smith apples, peeled and chopped

Frying

  • 12 cups vegetable oil, for frying

Vanilla Glaze

  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 34 tablespoons whole milk

Instructions

  1. Heat oil: In a large frying pan, heat the vegetable oil over medium heat until it reaches around 350°F (175°C) for frying.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon until fully combined.
  3. Combine wet ingredients: In another medium bowl, whisk the egg and whole milk until smooth and well blended.
  4. Form batter: Pour the wet ingredients into the dry ingredients and mix gently until just combined. Avoid overmixing to keep the batter light.
  5. Add apples: Fold in the chopped Granny Smith apples evenly throughout the batter.
  6. Fry fritters: Drop heaping teaspoons of the fritter mixture into the hot oil, frying in batches to avoid overcrowding. Fry each side until golden brown, about 2-3 minutes per side.
  7. Drain excess oil: Use a slotted spoon to remove the fritters and place them on a plate lined with paper towels to absorb any residual oil.
  8. Prepare vanilla glaze: In a medium bowl, whisk together the powdered sugar, vanilla extract, and 3-4 tablespoons of whole milk until the glaze is smooth and pourable.
  9. Glaze fritters: While the fritters are still warm but not hot, dip each fritter bite into the vanilla glaze, allowing excess glaze to drip off, then place them on a parchment-lined baking sheet or plate to set.

Notes

  • Use Granny Smith apples for their tart flavor, which balances nicely with the sweet glaze.
  • Make sure the oil is at the right temperature to avoid greasy fritters.
  • Do not overmix the batter to keep the fritters light and fluffy.
  • You can adjust the thickness of the glaze by adding more or less milk.
  • Serve fritters warm for the best taste and texture.
