Instructions

  1. Prepare the avocado filling: Dice the avocados and place in a large mixing bowl. Add lime juice, chopped sun-dried tomatoes, minced red onion, chopped cilantro, salt, and cracked pepper. Stir well, mashing the avocado slightly but leaving the mixture chunky for texture.
  2. Assemble the egg rolls: Lay out one egg roll wrapper. Spoon approximately 1/4 cup of the avocado filling onto the wrapper near the bottom corner. Fold the bottom of the wrapper over the filling, then fold in both sides, and roll tightly towards the top. Dip a finger in water and moisten the top corner of the wrapper to seal the edge, completing the roll. Repeat with the remaining wrappers and filling.
  3. Prepare for air frying: Lightly spray each assembled egg roll on all sides with oil spray to ensure crispiness during cooking.
  4. Air fry the egg rolls: Place the egg rolls in a single layer in the air fryer basket, leaving space between each for proper air circulation. Depending on your air fryer size, you may need to cook in batches.
