Apple Fries

  • 2 large Granny Smith apples
  • 1 cup all purpose flour (130 grams)
  • 1 tablespoon apple pie spice
  • 3 large eggs
  • 1/4 cup cinnamon sugar

  • 1 cup confectioners sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons whole milk

Instructions

  1. Prepare the apples: Peel the apples and slice them into thin strips using a sharp knife or fry cutter. Set aside for coating.
  2. Mix dry coating: In a small bowl, combine the all-purpose flour with apple pie spice and whisk well to evenly distribute the flavor.
  3. Whisk eggs: In a separate bowl, beat the eggs until well blended.
  4. First coating: Working in small batches, toss the apple strips into the flour mixture, scoop with a slotted spoon, and shake off excess flour.
  5. Dip in egg: Dip each floured apple strip into the whisked eggs, shake off excess egg, then return them to the flour mixture to coat again thoroughly.
  6. Remove excess flour: Ensure all apple fries are coated but not overly covered; excess flour should be shaken off for crispiness. Place them on a wire rack lined with parchment to catch any falling flour.
  7. Preheat air fryer: Set your air fryer to 325ºF (163ºC) and allow it to preheat.
  8. Prepare air fryer basket: Generously spray the bottom of the air fryer basket with cooking spray or oil spray. Arrange apple fries in a single layer without overlapping and spray tops evenly.
  9. Air fry first side: Cook the apple fries for 5 minutes at 325ºF.
  10. Turn and spray again: Flip the fries over, spray again with cooking oil, and cook for another 5 minutes until crisp and golden.
  11. Coat with cinnamon sugar: Remove fries immediately to another cooling rack or basket and sprinkle generously with cinnamon sugar while they are still hot to help the sugar stick.
  12. Repeat batches: Cook remaining apple fries in batches, repeating the coating and cooking process and tossing with cinnamon sugar when warm.
  13. Make icing: Whisk together confectioners sugar, vanilla extract, and whole milk gradually in a small bowl until smooth and pourable for dipping or drizzling.
