Ingredients

Scale

Fruit Filling

  • 1 cup strawberries, roughly diced

Base

  • 1 sleeve graham cracker sheets (about 9 full sheets)
  • 3/4 cup almond flour

Coating

  • 1 cup white chocolate chips (substitute dairy-free if needed)
  • 2 tsp coconut oil (can substitute canola, vegetable, or avocado oil)

Instructions

  1. Crush Graham Crackers: In a food processor, process the graham crackers until finely crushed. Ensure there are no large chunks left to create a smooth crumb base.
  2. Prepare Strawberries: Add the strawberries to the processor and pulse just until they’re finely diced. Avoid pureeing to keep small pieces visible for texture.
  3. Mix in Almond Flour: Add the almond flour and pulse or mix until everything is well incorporated, forming the filling mixture.
  4. Form Balls: Using a tablespoon or cookie scooper, scoop the mixture onto wax paper or a lined cookie sheet, making about 16 balls. Place them in the freezer for 20–30 minutes to firm up.
  5. Melt Chocolate Coating: While the balls freeze, melt the white chocolate chips and coconut oil together in a microwave-safe bowl. Heat for 30 seconds, stir, then heat for another 30 seconds or until fully melted and smooth.
  6. Dip and Coat: Once the balls are firm, remove from freezer and gently dip each into the melted white chocolate. Return them to the cookie sheet, optionally topping with crushed graham crackers for extra crunch.
  7. Set Coating: Place the dipped balls back in the freezer for 5 minutes to allow the chocolate coating to harden. After setting, remove and enjoy immediately or store in the refrigerator.

Notes

  • Use fresh strawberries for the best flavor and texture.
  • Substitute white chocolate chips with dairy-free alternatives to make it vegan.
  • Canola, vegetable, or avocado oils can replace coconut oil if preferred.
  • Store leftovers in an airtight container in the fridge for up to 5 days.
  • For extra garnish, dust with powdered sugar or sprinkle crushed graham crackers after dipping.
